A new restaurant has opened in Porto Franco’s Kai Street 4 building, where the author of the menu and head chef, Margo Paluoja has brought together cuisines that – at first glance – seem very different but at the same time harmonise with each other, offering real surprises through mixing flavours from different continents.

Margo Paluoja, who has run popular restaurants and was awarded the title of the best young chef, has a culinary signature of creating new combinations playfully, but based on expertise and experience.

“I have put the main emphasis on making the food sexy, lush and playful, and of course tasty as well,” says Margo Paluoja, the creator of the menu. “For me, the most important thing is the balance between raw materials and flavours.”

The new restaurant is open every day, but the concept is to split the day into two – lunch specials and sushi are during the day, while Margo Paluoja’s signature menu is available every evening from Tuesday to Saturday. On Fridays and Saturdays, UDU becomes a cocktail bar, with a DJ playing music under the roof of the high-ceilinged restaurant.
